Chicken Stroganoff with Rice
Author: sendrew – I love cooking dishes that my family always wants seconds of. I’m not a chef, but over the years I’ve gathered a few recipes that keep coming back to our table. This chicken stroganoff with rice is one of those.
When I first made it, I added too much mustard. I remember everyone was looking for water at the table. Since then, I’ve found the right balance that everyone enjoys. This is a creamy chicken stew with mushrooms, pickles, and mustard. It’s not a complicated dish, but you need to pay attention to the order of steps, as that’s what makes the texture really good.
Why does this Stroganoff recipe work?
- The mushrooms are sautéed separately, so they don’t break down in the sauce.
- Searing the chicken beforehand enhances its flavor.
- The combination of mustard and pickles gives that characteristic stroganoff vibe.
- The cream ties everything together without making it too heavy.
- I find it works best to add the pickles at the end.
Tools
- Large frying pan or deep skillet
- Cutting board
- Sharp knife
- Wooden spoon or silicone spatula
- Pot for the rice
Common Mistakes
- Adding the pickles too early. I’ve made this mistake before, and it ruined the texture. Add them at the end.
- The chicken doesn’t brown. If there’s too much meat in the pan at once, it will steam instead.
- The sauce becomes too thick. A little water can easily fix this.
- The mustard flavor is too strong. It’s better to start with less and taste as you go.
Pro Tips
- I usually sauté the mushrooms a bit longer for better flavor.
- If you’re in a hurry, you can chop the onion in advance.
- Always add the parsley at the end.
- It works well the next day, so it can be made ahead of time.
Stroganoff Variations:
- With Turkey Breast: can be made the same way as the chicken version.
- With More Mushrooms: feel free to increase the amount if you love them.
- Without Pickles: it will have a different character, but it works.
- With Brown Rice: you’ll get a heartier side dish.
Cooling and Storage
We rarely have leftovers, but if we do, it can be stored in a covered container in the fridge for 2-3 days after it has completely cooled. It can also be frozen. The creamy sauce may change a bit after thawing, but a good stir usually helps.
Reheating
The best method is in a pan. Add a tablespoon or two of water and heat for 4-5 minutes. It can also be reheated in the microwave on medium power for 2-3 minutes. In the oven, cover and heat at 160 °C for about 15 minutes.
FAQ

Can the mushrooms be omitted?
Yes, although they add a lot to the dish.
What mustard should I use?
Classic medium-strength mustard works well.
Can it be frozen?
Yes, but the sauce’s texture may change a bit.

Directions
Wash the mushrooms, then slice them along with their stems and sauté both sides in a bit of oil. After that, remove them from the pan.
Slice the chicken and add it to the pan, then sauté it and remove it from the pan as well. Don’t overcrowd the pan, or it will steam instead!
Pour a little oil into the pan and sauté the chopped onion until translucent; you can add a bit of salt. Then add the minced garlic. The garlic should be cooked for a very short time.
Once you can smell the garlic, add the mushrooms, stir, and pour in the cream and water. Season with salt and pepper, mix in the mustard, then add the chicken. Let it simmer for 5 minutes, then add the sliced pickles. Let it simmer for another 5-10 minutes. This is when the whole stew comes together.
Sprinkle a handful of chopped parsley into the stew. We always serve it with freshly cooked rice. You can sprinkle a little extra parsley on top.
