Pumpkin Camembert with Rosemary and Walnuts

Author: sendrew

There’s a recipe that doesn’t require many ingredients, yet it’s worth pulling out a nice pumpkin and a Camembert cheese. This pumpkin Camembert with rosemary and walnuts has become one of my favorites because it’s easy to prepare and a great choice even for those who aren’t fans of pumpkin.

I only cook at home, but I’ve learned that pumpkin needs some time in the oven. Once it softens and the edges start to brown, the cheese that goes on top pairs perfectly with it.

The essence of the recipe is to first roast the pumpkin slices, then top them with halved Camembert, maple syrup, rosemary, and walnuts. We return everything to the oven, and dinner or an appetizer to enjoy with baguette is ready.

Why This Pumpkin Camembert Recipe Works?

  • The pumpkin provides the base. It’s important to wait until the slices are properly softened and the tops are slightly browned.
  • The Camembert melts during the second baking. The cheese nicely rests on the pumpkin, ensuring every bite has both.
  • A little rosemary goes a long way. Chopped finely, it distributes easily over the cheese.
  • The walnuts don’t need to be crushed too finely. It’s better to leave some larger pieces that can be felt when biting.

Tools

  • Oven
  • Baking paper
  • Baking tray
  • Knife and cutting board

Instead of a baking tray, a suitably sized oven-safe dish will also work. It’s important that the dish can withstand baking at 200 °C.

Pro Tips

  • Don’t cut the pumpkin too thin. Slices of 3–4 cm hold their shape and won’t fall apart easily under the cheese.
  • Chop the rosemary finely. This makes it easier to distribute evenly over the cheese.
  • Only coarsely chop the walnuts. There’s no need to make fine crumbs; a few larger pieces complement the dish well.
  • Serve fresh. The Camembert is most enjoyable when warm, soft, and easy to slice.

Common Mistakes

The pumpkin remains too hard.

It may be that we cut it thicker, or our oven works slowly. Check with a fork, and only place the cheese on when the pumpkin is softened.

Too much maple syrup is added.

The sweetness of the maple syrup pairs well with the pumpkin, but it’s easy to overdo it. Start with one tablespoon and drizzle it evenly.

The cheese melts too much.

The Camembert will naturally soften in the oven. If you want it to hold its shape better, don’t leave it in the oven longer than necessary.

The walnuts burn.

Smaller walnut pieces can brown faster. If our oven is very hot, check the dish towards the end of the second baking phase.

Variations

Honey instead of maple syrup

If you don’t have maple syrup at home, you can use a bit of honey instead. Start with a smaller amount, as honey’s sweetness is noticeable even in small quantities.

With pecans

Instead of traditional walnuts, you can also choose pecans. This can create a delicious variation.

Stronger rosemary flavor

If you love rosemary, you can use a bit more than the original amount. It’s best to add it gradually so it doesn’t overpower the cheese’s flavor.

Served with bread

If you intend it as a standalone dinner, serve it with more baguette or crusty bread. This way, it’s easy to scoop up the melted cheese and juices left on the plate.

Cooling and Storage

Let the leftovers cool for a short time, then place them in a well-sealed container and refrigerate. Ideally, it should go into the fridge within 2 hours and be consumed within 2–3 days.

The texture of the Camembert may change after refrigeration, and the pumpkin will become a bit softer. It’s not really worth freezing, as the texture of the cheese will be less pleasant after thawing.

Reheating

I would choose the oven, as this warms the pumpkin more evenly. Place the dish in an oven-safe container and heat at 160 °C for about 8–12 minutes, a bit longer if necessary.

It can also be reheated in the microwave in shorter 20–30 second intervals at medium power. Check in between to ensure the cheese doesn’t melt too much.

FAQ

Should I cut the Camembert cheese in half?

Yes, definitely cut it in half before placing it on the pumpkin slices.

Can the maple syrup be omitted?

Yes. It can be made without it if you prefer it less sweet. Honey can also be used as a substitute.

When should I add the walnuts and rosemary?

Before the second baking phase, after adding the Camembert and maple syrup. This way, the toppings bake together with the cheese.

What should I do with leftover pumpkin?

You can make a delicious pumpkin cream soup from the leftover pumpkin, so nothing goes to waste.

Summary

For me, this recipe works because it doesn’t require much preparation; the oven does most of the work. The pumpkin, Camembert, rosemary, and walnuts pair well together, and the baguette is a perfect accompaniment. And if there’s leftover pumpkin, you can whip up a soup the next day.
