Leek and Sheep Cheese Pie

When I first baked this pie, to be honest, I just wanted to clean out the fridge: I had an open package of sheep cheese, a leek, and some cream left over. I didn’t expect much from it, but when I took it out of the oven and the aroma of the freshly baked pastry mingled with the roasted leek and the distinctive, tangy scent of the sheep cheese, I immediately knew that this recipe would earn a permanent place in our kitchen.

Why does this pairing work?

The secret to success lies in the perfectly balanced contrast of flavors and textures:

Saltiness and creaminess vs. sweetness: The pronounced, tangy, salty character of the sheep cheese is perfectly softened by high-quality cream and eggs, while the leek caramelizes under heat, releasing its natural sweetness.

Play of textures: The pastry provides a crispy, crumbly base for the silky, almost melt-in-your-mouth filling, into which halved cherry tomatoes burst like little roasted fruity explosions.

Where can it go wrong?

Soggy pastry:

Mistake: If you pour the liquid filling directly onto the raw pastry, the bottom will remain rubbery and sticky.

Tip: Pre-bake! Roll out the pastry, fit it into the pie dish, prick it with a fork, and pre-bake at 180 °C for 15-20 minutes before pouring in the filling.

Be careful with the salt:

Mistake: Over-salting. The sheep cheese is inherently quite salty.

Solution: Add just a pinch of salt to the filling (or you can even omit it entirely), but be bolder with the pepper and fresh basil!

Storage, freezing, and reheating

Storage: In the refrigerator, covered tightly, it will keep perfectly for 3-4 days.

Freezing: Freeze the baked and completely cooled pie sliced, separated by parchment paper. This way, you can take out 1-2 portions at any time.

Reheating: Place the slices in a preheated oven at 160 °C (or air fryer) for 8-10 minutes. The pastry will become crispy again, and the filling will be heated through.

Serving suggestions

The genius of the pie is that it is excellent warm, at room temperature, and even cold.

As a main dish: Serve with a large bowl of fresh, lemony arugula or lamb’s lettuce for a light yet satisfying lunch or dinner.

As a snack for guests: Let it cool to warm (this makes it easier to slice), cut into smaller squares or triangles, and serve with a glass of dry, crisp white wine (such as a good Italian Riesling or Ezerjó) or a chilled rosé.

Variations and twists

Meaty version: Sauté a bit of diced smoked bacon or finely chopped bacon along with the leek.

Mushroom twist: Sautéed button or wild mushrooms pair excellently with the tanginess of the sheep cheese.

Spinach & Garlic: You can replace half of the leek with baby spinach and a clove of crushed garlic.

For cheese lovers: In the last 10 minutes of baking, sprinkle some aged smoked cheese or Edam on top for an even prettier golden brown crust.

Directions

Step1

Crumble the butter into the flour, knead together, then add the egg and salt and mix well. Form a ball, which you will roll out on a floured surface to a thickness of 4-5 mm. Roll the pastry onto the rolling pin, then lay it into the pie dish. Line the dish with the pastry, trimming off any excess. Prick the pastry with a fork, then pre-bake in a preheated oven at 180 °C.

Step2

While the pie is baking, we prepare the filling. In a bowl, mix the sheep cheese with the cream and eggs, and grind in a pinch of pepper. Stir in the sliced leek.

Step3

Remove the pre-baked pie from the oven and pour in the sheep cheese mixture. Garnish with halved cherry tomatoes and basil leaves, then return to the oven for another 30 minutes. When small brown spots appear on the pie and the pastry has turned a nice red color, it is done. Serve warm, but it will also be very tasty when cooled!
