Traditional Bird’s Milk with Chocolate Shavings
Author: Home cooking enthusiast who loves to bring out old family recipes. I’m not a chef, but I’ve learned quite a few tricks while making bird’s milk.
Traditional bird’s milk has always been one of those desserts in our home that rarely lasts until the next day. Made from simple ingredients, it has something that makes everyone happy.
My first attempt didn’t go very well; the custard became too thick. Then I realized that patience is key here. There’s no need to rush.
This recipe is all about the light meringue dumplings and the vanilla cream. No complications.
Why does this recipe work?
- The meringue dumplings cook for only a short time, so they remain beautiful and light.
- The egg yolk base needs to be heated gradually, which ensures a smooth texture.
- The vanilla pod gives a much nicer flavor than most extracts.
- Cooling is really important. It always tastes better after a few hours in our experience.
Tools
- Medium saucepan
- Whisk or hand mixer
- Mixing bowl
- Tablespoon
- Knife for the vanilla pod
Common Mistakes
- The meringue is not stiff enough. In this case, the dumplings can easily fall apart.
- The egg yolk mixture is cooked over too high heat. This can cause it to curdle.
- Not allowing it to cool enough. It really is best served cold.
- Adding too many meringue dumplings to the milk at once, which can cause them to stick together.
Pro Tips
- I always heat the milk slowly to bring out the vanilla flavor better.
- If you have time, let it rest in the fridge overnight.
- Add the chocolate shavings just before serving.
- You can also chill the meringue dumplings separately until serving.
Variations
- Using dark chocolate shavings will give it a more pronounced flavor.
- A delicious winter version can be made with orange zest.
- You can use vanilla paste instead of a vanilla pod.
- Sometimes we top it with toasted almonds.
Cooling and Storage
Store the bird’s milk covered in the refrigerator. It generally keeps well for about 2 days.
In our home, it rarely lasts that long, but if it does, it’s best to keep the meringue dumplings in the cream to prevent them from drying out.
I don’t usually freeze it, as the texture changes after thawing.
Reheating
This dessert is best served cold.
If you do want to warm it slightly, do so over very low heat, stirring in a saucepan. You can microwave it, but only for a short time. Due to the meringue dumplings, this method doesn’t yield the best results.
FAQ
Can it be made the day before?
Yes, in fact, I think it’s better that way.
Does it work with vanilla sugar?
Yes, although the flavor from the vanilla pod is nicer.
Why did it become too thick?
It probably heated at too high a temperature.
How long does it keep?
About 2 days in the refrigerator.
Do I need a mixer?
Not necessarily, it can be made with a whisk as well.
Summary
Traditional bird’s milk is one of those recipes I always love to return to. There’s nothing complicated about it, yet it gets eaten every time. And if there’s a little left, it’s not bad the next morning either.

Ingredients
Some units use ingredient-specific estimates.
- For the meringue dumplings
- For the vanilla base
- For serving
Directions
Separate the eggs. Whip the egg whites with a pinch of salt until stiff peaks form.
Cut the vanilla pod in half and scrape out the seeds with the edge of a knife. Add the seeds to the milk and bring it to a boil, but not on the highest heat. Use a tablespoon to drop the meringue mixture into the milk and cook for 1-2 minutes, then flip and cook the other side as well. Remove to a bowl. Don't overcrowd the saucepan, as it makes it easier to turn the meringue dumplings.
Whip the egg yolks with the sugar and a pinch of salt until fluffy, then pour in 1-2 deciliters of the cooled lukewarm milk. Mix until smooth. Gradually add the rest of the milk while stirring continuously. This prevents the egg yolks from curdling.
Start heating on low. It will thicken nicely. Wait until it cools, then refrigerate. When serving, add a few meringue dumplings to the cold vanilla milk and grate some chocolate on top.
