Pumpkin Cream Soup with Roasted Pumpkin Seeds
For us, autumn simply doesn’t exist without pumpkin cream soup. The pumpkin should be roasted, not boiled, before it goes into the pot. Ever since I discovered this, it has become a hit alongside pumpkin spice lattes.
Why does this recipe work?
The soul of the soup is the Maillard reaction: in the oven, the natural sugars in the pumpkin caramelize, creating a deep, sweet, nutty flavor layer that cannot be achieved through simple boiling.
The seasoning of nutmeg and garlic provides a perfect balance: nutmeg enhances the creamy sweetness of the pumpkin, while garlic and onion add the salty, spicy base that prevents the soup from becoming dessert-like. The cooking cream not only gives a silky texture but also helps to dissolve and enhance the flavors of the spices (and it also aids in the absorption of the fat-soluble vitamin A found in the pumpkin).
Where can it go wrong?
Watery, tasteless base: If you cover the pumpkin and steam it at low heat in the oven, you’ll end up with boiled pumpkin instead of roasted. Let the edges brown slightly!
Overdoing the liquid: Always start with less broth/water than the recipe calls for when blending. You can thin it out later with cream or water, but correcting the thickness afterward can be difficult without compromising the flavor experience.
Too much nutmeg: Nutmeg is wonderful but an aggressive spice. Measure the specified 1 teaspoon precisely, as too much can make the soup bitter and medicinal.
Lumpy, fibrous texture: Don’t skimp on the immersion blender! Blend on maximum speed for at least 2-3 minutes to completely break down the pumpkin fibers.
Serving
A cream soup can become textureless on its own, so the garnish is not just decoration but an integral part of the dish.
Roasted pumpkin seeds: In a dry (oil-free) pan, roast the pumpkin seeds over medium heat until they start to pop and become fragrant. Remove them from the pan immediately, as they can burn in seconds!
Serving steps: Ladle the soup into deep bowls, drizzle a little cold-pressed pumpkin seed oil on top (it adds a beautiful dark green contrast), generously sprinkle with roasted pumpkin seeds, and if desired, finish with a touch of freshly ground black pepper.
Storage, Freezing, and Reheating
In the fridge: It will stay fresh in an airtight container for 3-4 days. Due to the cream, it’s best to cool it down and refrigerate as soon as possible.
Freezing: The pumpkin cream soup freezes well, but for the best results, freeze it without cream. If you freeze the finished soup with cream, the cream may separate or become grainy upon thawing. If this happens, a quick blend with an immersion blender while reheating will restore the texture.
Reheating: Heat gently over low heat, stirring frequently, as the thick creamy consistency can easily cause the bottom of the pot to burn.
Exciting Variations
- Ginger-Coconut (Asian twist): Replace the cooking cream with coconut milk, and sauté a thumb-sized piece of grated fresh ginger and a little chili flakes along with the onion.
- Roasted Garlic-Thyme: Instead of 3 cloves of raw garlic, roast a whole head of garlic in the oven alongside the pumpkin, and squeeze the creamy interior into the soup with a bit of fresh thyme.
- Gorgonzola / Blue Cheese: When serving, crumble some blue cheese or gorgonzola on top of the hot soup alongside the roasted pumpkin seeds. The combination of sweet pumpkin and tangy, salty cheese is genius.

Ingredients

Directions
Cut the pumpkin into 4 pieces, remove the seeds, and place it in a 200°C oven for 40-50 minutes. Roast until it starts to brown and caramelize. Once done, remove it from the oven and let it cool.
Chop the onion and start sautéing it in a little oil. Add the garlic as well. When the garlic aroma begins to rise, scoop the cooled pumpkin from its skin into the pot. Sauté the pumpkin for another 4-5 minutes.
Heat the water in another small pot, then dissolve the vegetable broth cube in it, and pour it over the pumpkin. Season with salt and pepper to taste. Grate in the nutmeg.
Add the cream, then blend the soup until creamy with an immersion blender. Let it simmer for a moment, then serve with roasted pumpkin seeds. (Roast the pumpkin seeds in a hot pan before using.)
