Directions
Dice the chicken and let it sit in the marinade for at least 1 hour. For the marinade: mix the yogurt with 1 tbsp Garam Masala, 1 tsp cumin, 1 tsp turmeric, and 1 tsp ground coriander.
Heat some oil in a pot, throw in the chopped onions, then the garlic, and sauté until golden.
Add the passata to the onions. Stir in the remaining 1 tbsp Garam Masala, 1 tsp salt, and 2 tsp cane sugar. Let it simmer on low heat for 15 minutes, then use a stick blender to make the sauce perfectly smooth. Remove from heat for a moment.
In a separate pan, sear the marinated chicken in a little oil until it gets some nice color. Once browned, transfer the chicken pieces into the smooth sauce.
Simmer the Garam Masala chicken in the sauce for about another 30 minutes. Serve it hot with jasmine rice and fresh naan bread.
