Basil Chicken with Sun-Dried Tomatoes

While many consider this dish an Italian classic, it is actually one of the world’s most famous “fusion” success recipes. Tuscan farmers have always been masters at transforming a few high-quality ingredients—garlic, sun-dried tomatoes, fresh herbs—into restaurant-quality flavors on the table.

Why Does It Work Perfectly?

The culinary magic lies in the contrasts of chemistry and flavor:

Flavor Concentration: The intense, sweet acidity of sun-dried tomatoes cuts through the richness of the cream, ensuring the dish is neither heavy nor overwhelming.

Play of Textures: The chicken breast is juicy and tender, the pasta is al dente and springy, while the finely chopped sun-dried tomatoes add a pleasant bite to the dish.

Volatile Aromas: Fresh basil is added at the very end, allowing the essential oils released by the heat to instantly fill the kitchen with freshness.

Where The Basil Chicken Can It Go Wrong?

Although the dish is quick to prepare, there are a few critical points where the final result can falter:

Overcooked Chicken Breast: If you sauté the strips for too long, the chicken will become tough. Cook over high heat, quickly searing the outside, then finish gently simmering in the sauce.

Overcooked Pasta: Once the pasta rises to the surface of the water, transfer it to the sauce. Even better, you can toss it directly in the sauce instead of boiling it separately!

Burnt Garlic: Never over-sauté garlic! If it browns, it will make the entire creamy base bitter. Sauté it in the oil from the sun-dried tomatoes for just 30-40 seconds.

Basil Added Too Early: If you cook the basil in at the beginning, it will lose its fresh flavor and turn a dark, unattractive color. Always add it at the very end, off the heat.

Storage, Freezing, and Reheating

Refrigerator Storage: In an airtight container, it will keep perfectly in the fridge for 3-4 days. The pasta will absorb even more sauce over time, enhancing the flavors by the next day.

Freezing: Generally, we do not recommend freezing creamy sauces and pasta. During thawing, the cream tends to separate (the fat and water separate), and the pasta can become mushy. If you must freeze it, only freeze the chicken and sun-dried tomato base without cream, and finish the dish with fresh cream and newly cooked gnocchi after thawing.

Gentle Reheating: The best method is to reheat the dish in a skillet over low to medium heat. Add 1-2 tablespoons of cream, milk, or a little water to restore the sauce’s silky and creamy texture. Heat gently while stirring.

The Art of Plating

Add a touch of restaurant elegance to your plating! Use a deep plate, as it will hold the creamy sauce and keep it warm.

  1. Place a generous serving of pasta topped with the juicy chicken in the center of the plate.
  2. Grate a generous amount of fresh Parmigiano Reggiano or Grana Padano on top.
  3. Garnish with a few fresh whole basil leaves and a drizzle of high-quality extra virgin olive oil (or the reserved herbed oil from the sun-dried tomatoes).
  4. Serve with a glass of chilled, dry Italian white wine, such as a fresh Sauvignon Blanc, which perfectly complements the creamy flavors.

Super Variations for Innovation

This recipe provides an excellent base for experimentation. If you want to tweak the familiar flavors, try these alternatives:

Spinach and Gorgonzola Version: Add a large handful of fresh baby spinach and 50 g of crumbled gorgonzola to the sauce alongside the cream. The character of the blue cheese and the green of the spinach add a brilliant twist.

With Crispy Bacon or Pancetta: Before sautéing the chicken, crisp up some diced bacon. Sauté the garlic in the rendered fat for a smoky, rich base flavor for the entire dish.

Mushrooms and Thyme: Sauté brown button mushrooms or wild mushrooms with a bit of fresh thyme alongside the chicken. The earthy flavor of the mushrooms pairs wonderfully with the sun-dried tomatoes.

Low-Carb / No Pasta Version: Instead of pasta, serve the creamy sun-dried tomato chicken breast with steamed broccoli, cauliflower puree, or zucchini noodles (zoodles).

I ordered my favorite Barilla pasta from Allegro for this dish. You can find more fantastic pasta recipes as you browse our site.

Directions

Step1

Slice the chicken breast and begin sautéing in a little oil. Add salt and freshly ground pepper to taste. (A bit of heat is also welcome if you like it spicy.)

Step2

Chop the sun-dried tomatoes and add them to the chicken. The chopped garlic can also go in with the meat. In a pot, bring well-salted water to a boil for the pasta.

Step3

Simmer the sauce for 25-30 minutes, then add the cream. Reserve 2 ladles of the pasta cooking water. (Later, the pasta will absorb the moisture.) Add the sliced basil as well.

Step4

Drain the pasta and mix it with the sauce. If it seems like there’s too much liquid, don’t worry; the pasta will absorb it, and we’ll end up with a truly flavorful dish.
