No-Bake Kinder Bueno Cake
For many of us, Kinder Bueno is not just a sweet treat, but a pure, nostalgic delight. When I first decided to transform this hazelnut cream-filled crunch into a no-bake cake, I must admit I had my reservations: would it be too rich? Would it retain its iconic flavor? The answer came with the first taste — this dessert has become the unchallenged king of festive tables and summer garden parties.
Why Does This Dessert Work?
The secret to Kinder Bueno’s success lies in the perfect balance of flavors and textures. The crunchy wafer, silky hazelnut cream, and soft milk chocolate trio create a textural play that we call textural contrast in the kitchen.
As a no-bake cake, it is brilliant because:
The softness of mascarpone and cream tames the rich sweetness of Nutella and chocolate.
The crushed biscuit base provides a stable, buttery-crunchy structure that can support the rich cream.
Hazelnut-chocolate layers stimulate the taste buds that we love about the original chocolate.
Where Can It Go Wrong?
Although this is a no-bake dessert, a few small mistakes can easily ruin the final result. Pay attention to these steps:
Overheating the gelatin: Never bring gelatin to a boil! If you boil it, it will lose its gelling ability, and the cream will remain soft and won’t slice nicely. Just heat it until it completely dissolves.
Overwhipping the cream: Whip the heavy cream to soft-medium peaks only. If you overwhip it, it will curdle, become buttery, and the cream will lose its silkiness.
Crumbly biscuit base: The butter must be completely melted and thoroughly mixed with the biscuits. Press it down firmly in the pan with the bottom of a glass; otherwise, it will crumble when slicing.
Storage, Freezing, and Serving
Storage: It will stay perfect in the refrigerator, covered, for 3-4 days. The creams meld together even better as they mature, so it might taste even better the next day.
Freezing: The cake freezes wonderfully! Slice it, place parchment paper between the slices, and freeze in a sealed container. It will last for 1-2 months.
Thawing: Since this is a no-bake mousse-gelatin cake, microwaving or heating in the oven is strictly prohibited, as the cream will melt! Transfer the frozen slices to the refrigerator overnight to thaw slowly, or leave them at room temperature for 20-30 minutes before serving.
Serving: Slice with a knife dipped in hot water and dried for the best results. Decorate the top with reserved Kinder Bueno pieces just before serving to keep the wafer crunchy and prevent it from absorbing moisture!
Exciting Variations
If you want to take the recipe further, try these alternatives:
Kinder Bueno White: Replace Nutella with white chocolate hazelnut spread (e.g., white Nutella or hazelnut butter + melted white chocolate), and use white chocolate hazelnut candy on top.
Fruity Twist: Serve with fresh raspberries or tart cherry sauce. The acidity of red berries brilliantly cuts through the richness of the hazelnut and chocolate.
Cup Dessert Version: You can also make a layered cup dessert with the same ingredients — in this case, you can completely omit the gelatin!

YOUR RECIPE
Ingredients
Some units use ingredient-specific estimates.
Directions
(I used a 24 cm cake pan) Mix the crushed biscuits with the softened butter and powdered sugar. Line the bottom of the cake pan with parchment paper to prevent sticking, then smooth the mixture evenly in the pan.
Add the whipping cream stabilizer to the heavy cream, then whip the cream to stiff peaks. Fold in the Nutella and mascarpone until well combined. Dissolve the gelatin in 100 ml of cold milk until smooth, then mix it into the cream.
Arrange the halved Kinder Buenos around the edge of the cake pan, pressing the cut side slightly into the base.
Pour the cream into the center of the pan, smoothing the top, then grate some of the hazelnut chocolate over the top. Decorate with a few pieces of chocolate on top. Place the finished cake in the refrigerator for 2-3 hours to set.
