The secret to perfectly juicy cottage cheese cake and tips
Using semi-fat cottage cheese and the juice released from the peaches ensures that the final result is an irresistible, juicy cottage cheese cake. You can forget about dryness: the crumbly layer drizzled on top provides creamy softness in every bite. Thanks to this technique, the cake retains its enjoyment even the next day.
Common Mistakes and Their Fixes
- The batter sticks to the bottom of the tray: If you forget the fat or the paper, it can stick. Solution: Always line the tray with baking paper, or lightly grease it and dust it with flour.
- The peach pieces release too much juice: The wet fruit can make the center soggy. Solution: Drain the canned peaches thoroughly in a colander, or pat dry with paper towels to remove excess syrup.
- Too dense a result: Overmixing the flour unnecessarily activates the gluten structure. Solution: Mix the wet and dry ingredients only until the flour lumps just disappear.
Storage and Reheating
- Storage: It stays fresh at room temperature, covered with a clean kitchen towel for 2 days, and in a closed container in the refrigerator for 4–5 days.
- Reheating: Warm it in the microwave for 10–15 seconds to restore the creamy softness of the cottage cheese layer.
Variations
- Citrus freshness: Grate the zest of half an organic lemon and add a few drops of fresh lemon juice to the cottage cheese mixture.
- Crispy texture: Sprinkle sliced almonds or coarsely chopped walnuts on top just before baking.
- Berry experimentation: Instead of peaches, you can also make it with a mix of blackberries, raspberries, or apricots.
