Garam Masala Chicken Recipe:

Garam Masala Chicken is one of the most characterful yet incredibly friendly dishes in Indian cuisine. It’s not just a single, carved-in-stone recipe, but a way of cooking where the complexity of spices takes center stage. While the famous Butter Chicken relies on creamy mildness, here the blend of toasted cumin, cinnamon, cardamom, and cloves dominates the show.

The secret lies in the layering: we start by marinating the chicken in a spiced yogurt mix with ginger and garlic, which doesn’t just add flavor but makes the meat incredibly tender. As it cooks, the onions and tomatoes melt into a thick, dark sauce infused with the deep, earthy aromas of Garam Masala. This dish is for those who look beyond surface-level heat and seek the true, deep harmony of spices.

Directions

Step1

Dice the chicken and let it sit in the marinade for at least 1 hour. For the marinade: mix the yogurt with 1 tbsp Garam Masala, 1 tsp cumin, 1 tsp turmeric, and 1 tsp ground coriander.

Step2

Heat some oil in a pot, throw in the chopped onions, then the garlic, and sauté until golden.

Step3

Add the passata to the onions. Stir in the remaining 1 tbsp Garam Masala, 1 tsp salt, and 2 tsp cane sugar. Let it simmer on low heat for 15 minutes, then use a stick blender to make the sauce perfectly smooth. Remove from heat for a moment.

Step4

In a separate pan, sear the marinated chicken in a little oil until it gets some nice color. Once browned, transfer the chicken pieces into the smooth sauce.

Step5

Simmer the Garam Masala chicken in the sauce for about another 30 minutes. Serve it hot with jasmine rice and fresh naan bread.

Conclusion

Pro tip at the end: The real magic happens if you sprinkle a tiny bit of extra fresh Garam Masala over the dish just before serving. It releases the essential oils and fills the kitchen with an irresistible scent. Pair it with a cold drink, and you've got the perfect dinner!
